Can I Use Visa Electron & American Express in USA?

Im going to NYC soon, and last time i went i took cash instead of card - but recently a friend went and took only a card, paying for it in-store the exchange rate changed daily so it meant they got items cheaper - rather than me who converted ALL my money at once on one exchange rate.

So this time i want to take my own Visa Electron, but over here in the UK i know what shops take it - in the USA its hard to know all the shops, as im not even sure what shop i'll go into. So is it worth taking and using instead of dollars in cash?

For backup my dad said i can take his AmEx, this is because i know this works everywhere - is there a charge per transaction for overseas usage? My friend who went to California took their mums master-card and signed for it, when buying stuff from shops etc. So will i be allowed to use my dads card, or will they see it as if i have stolen someone's?
